Eggplant Stuffed with Minced Meat


Recipe:

Take 2 large eggplants, cut them in the center, salt (1 T spoon), black pepper (½ T spoon) and olive oil (2 T spoon) apply these on the inner and outer side. Then bake it for 20 minutes until they become soft. Then prepare the filling by putting olive oil in the pan add finely chopped on large onion and cook for 10 minutes now add 500 grams of minced meat , then add 2 minced garlic cloves, 1 large tomato chopped, 2 Tablespoon tomato paste, 1 Teaspoon ground  cumin, 1 teaspoon paprika, 1/2 Teaspoon ground cinnamon, salt and pepper to taste. Cook this stuff for 15 minutes. Now add this cooked stuffing in a baked eggplant. For having more taste cheese and be added (optional). Preheat the oven, grease the baking sheet and put the stuffed eggplant in the oven for 20-25 minutes until the eggplants are tendered and the cheese is melted and becomes golden brown. Garnish with fresh parsley and enjoy your delicious eggplant stuffed with minced meat.

Other Options:

There are some more options in which we use bell peppers and zucchini stuffed with minced meat. As an option cheese can also be added. 

This combination of meat and vegetables is very healthy and tasty.
