Ingredients:
- 1 cup rolled oats
- 2 cups chicken broth (or water)
- 1 cup cooked chicken breast, shredded or diced
- 1 cup fresh spinach leaves, chopped
- 1 garlic clove, minced
- 1 tablespoon olive oil
- 1 teaspoon soy sauce (optional)
- A pinch of salt and pepper
- Grated Parmesan or feta cheese (for topping, optional)
Instructions:
In a medium saucepan, put the chicken broth (or water) to a boil over medium warmness. After this add the rolled oats and a pinch of salt, and decrease the heat to low. Simmer for approximately five mins, stirring from time to time till the oats are smooth and the liquid is absorbed. Let the oatmeal cook, warm olive oil in a skillet over medium warmness. Now add the minced garlic and cook for about 30 seconds until aromatic. After this add the chopped spinach and sauté till wilted, about 2-three mins. Season with salt and pepper. Once the oatmeal is ready, stir within the cooked fowl and sautéed spinach. Add soy sauce if you need an extra increase of taste. Cook for some other 1-2 minutes, stirring until the whole thing is well mixed and heated thru. Divide the savory oatmeal into bowls and, if desired, pinnacle with grated Parmesan or feta cheese for additional richness.
