Roasted Veggie Oatmeal


Ingredients:

  • 1 cup rolled oats
  • 2 cups water or vegetable broth
  • 1 cup bell peppers, chopped
  • 1 cup zucchini, chopped
  • 1 cup carrots, chopped
  • 1/2 cup onions, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon salt

  • Optional: 1 teaspoon garlic powder, 1/2 teaspoon dried herbs (e.g., thyme or rosemary)

Instructions:

Preheat your oven to 400°F or 200°C. In a massive bowl, toss the bell peppers, zucchini, carrots, and onions with olive oil, salt, pepper, and non-obligatory garlic powder and herbs.
