Suddenly, I found myself juggling responsibilities—paying rent, working long hours, and figuring out how to get wholesome, satisfying meals on the table. I’ll admit it: in the beginning, cooking wasn’t my strong suit. Healthy eating felt like a mountain I didn’t know how to climb.
But I embraced the challenge, and soon enough, I discovered ways to transform my favorite comfort foods into nourishing, healthier versions. Much of this was driven by necessity, as I struggled with food sensitivities that demanded extra care and creativity in the kitchen.
