Apricot Black bean and Hazelnut oatmeal


Ingredients:

  • 1 cup rolled oats
  • 1 ½ cups water (or milk of your choice)
  • ½ cup cooked black beans (canned or boiled)
  • ¼ cup dried apricots (chopped)
  • 2 tablespoons hazelnuts (toasted and chopped)
  • 1 tablespoon honey or maple syrup (optional)
  • ½ teaspoon cinnamon
  • Pinch of salt
  • Extra chopped hazelnuts and apricot slices for garnish (optional)

Instructions:

In a medium saucepan, deliver water (or milk) to a boil. Add the rolled oats and a pinch of salt. Reduce the warmth to low and simmer for five-7 minutes, stirring on occasion until the oats are creamy and cooked. Stir inside the cooked black beans, chopped dried apricots, and cinnamon. Cook for an additional 2-3 minutes to combine the flavors and heat the mixture via.Gently fold in the chopped hazelnuts. If you decide on a sweeter oatmeal, drizzle honey or maple syrup to flavor. Divide the oatmeal into bowls and garnish with extra chopped hazelnuts and apricot slices for introduced texture and visible attraction.
