Broccoli and Cheddar Oatmeal


Ingredients

  • 1 cup rolled oats
  • 2 cups water or vegetable broth
  • 1 cup broccoli florets, chopped
  • 1/2 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh chives for garnish (optional)

Instructions

In a medium saucepan, deliver the water or vegetable broth to a boil. Add the rolled oats and reduce the heat. Let the oats simmer for approximately five mins or till they attain your favored consistency, stirring from time to time. While the oats are cooking, steam the broccoli till smooth, approximately three-4 minutes. You can use a steamer or absolutely microwave the broccoli with a little water. In a small skillet, warmth the olive oil over medium warmth. After this add the minced garlic and cook dinner for 1-2 mins till aromatic, being cautious no longer to burn it. Once the oats are carried out cooking, stir within the sautéed garlic, steamed broccoli, and shredded cheddar cheese. Mix well till the cheese is melted and everything is evenly blended. Season with salt, pepper, and crimson pepper flakes for a bit of a kick. Garnish with clean chives if favored. Serve warm and revel in your savory oatmeal.
