Keto Brinjal Chicken Cheesy Patties


Recipe:

Take chicken boneless 500 grams, add olive oil, ½ T spoon salt and ½ T spoon black pepper, red chili flakes (½ T spoon), oregano (½ T spoon), cook it for 20 minutes. Allow it to cool and then mash the chicken. Now take one large brinjal and chop it, add grinned cheddar cheese (½ cup), almond flour ( ¼ cup), 1 egg, chopped parsley (¼ cup), garlic (2 cloves), salt (½ T spoon), black pepper and paprika (¼ T sp), olive oil (1 T sp). Now mix all these ingredients with mashed chicken, make the patties. Cook the patties in the pan for 3-4 minutes from each side. Preheat the oven, cut the brinjal in round shape and place patties between the cuttings of the brinjal as shown above. Transfer the patties to the baking sheet and spread the cheddar cheese on them. Now bake them for 10-15 minutes until cooked completely. Serve with lemon, fresh coriander and mayonnaise or ketchup.
