Pomegranate Pine nuts and Pigeon peas oatmeal


Ingredients:

  • 1 cup rolled oats
  • 1 ½ cups water (or milk of your choice)
  • ½ cup cooked pigeon peas (soaked and boiled)
  • ¼ cup pomegranate seeds
  • 2 tablespoons pine nuts (toasted)
  • 1 tablespoon honey or maple syrup (optional)
  • ½ teaspoon cinnamon
  • Pinch of salt
  • Extra pomegranate seeds and pine nuts for garnish (optional)

Instructions:


In a medium saucepan, carry water (or milk) to a boil. Add the rolled oats and a pinch of salt. Reduce warmth to low and simmer for five-7 mins, stirring every so often till the oats are creamy and cooked. Stir in the cooked pigeon peas and cinnamon. Cook for an additional 2-3 mins, permitting the flavors to meld.Gently fold inside the pomegranate seeds and toasted pine nuts. For sweetness, drizzle honey or maple syrup to taste.
