Ingredients
- 1/2 cup quinoa
- 1/2 cup rolled oats
- 1 cup black beans (cooked or canned)
- 2 cups water or vegetable broth
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 1 clove garlic, minced
- Fresh cilantro for garnish (optional)
- Lime wedges (optional)
Instructions:
Rinse the quinoa very well beneath bloodless water. Combine quinoa and oats in a medium sized bowl. Now upload water or vegetable juice and convey to a boil. Once it involves a boil, lessen the heat and simmer for about 15 minutes or till the liquid is absorbed. While the quinoa and oats are cooking, warmth the olive oil in a frying pan over medium warmness. After this upload chopped onion and fry till translucent. Then, add the minced garlic and prepare dinner for some other minute till fragrant. Add the cooked black beans to the pan at the side of the onion and parsley. Add cumin seeds, chili powder, salt and pepper. Cook dinner for about 5 mins, allowing the flavors to mass melt. Once the quinoa and oats are cooked, toss with a fork. Mix in the black bean combination, making sure it’s all well mixed.Taste spices and adjust as wished.After this upload the quinoa, black beans and oatmeal to bowls. Garnish with sparkling cilantro and a squeeze of lime for extra taste.
