Smoked Salmon and Cream Cheese Oatmeal


Ingredients:

  • 1 cup rolled oats
  • 2 cups water or milk (or a combination of both)
  • 2-3 tablespoons cream cheese
  • 2-3 ounces smoked salmon, thinly sliced
  • 1 tablespoon capers (optional)
  • 1 tablespoon fresh dill, chopped
  • 1 teaspoon lemon juice
  • A pinch of salt and pepper
  • 1 tablespoon olive oil or butter (for richness, optional)

Instructions:

In a medium saucepan, deliver the water or milk to a boil. Add the rolled oats and a pinch of salt. Reduce the heat to low and let the oats simmer for about five-7 minutes, stirring every so often until they reach your favored consistency. Stir in the cream cheese whilst the oatmeal continues to be hot, allowing it to melt and blend into the oats, creating a creamy texture. Add the lemon juice, sparkling dill, and pepper to the oatmeal, blending well for a bright and herby taste. Divide the oatmeal into bowls and top every serving with skinny slices of smoked salmon. Add capers for a briny taste if preferred. Drizzle with olive oil or melted butter for an additional touch of richness.
