Spinach and Feta Oatmeal


Ingredients

  • 1 cup rolled oats
  • 2 cups water or vegetable broth
  • 1 cup fresh spinach, chopped
  • 1/4 cup crumbled feta cheese
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh lemon juice (optional, for garnish)

Instructions

In a medium saucepan, deliver the water or vegetable broth to a boil. Add the rolled oats and reduce the heat. Let the oats simmer for about 5 minutes or till they reach your favored consistency. In a small skillet, warmth the olive oil over medium warmth. After this, upload the minced garlic and prepare dinner for 1-2 minutes till fragrant. Then, upload the chopped spinach and sauté for 2-3 mins till wilted. Once the oats are cooked, stir within the sautéed spinach and garlic. Mix inside the crumbled feta cheese, stirring until well blended. Season the oatmeal with salt, pepper, and red pepper flakes if you need a piece of spice. Garnish with a squeeze of fresh lemon juice for introduced brightness. Serve heat and experience!
